Grape adds a familiar, wine-like depth to kombucha that is surprisingly sophisticated. Both fresh grapes and pure grape juice work well, creating a brew that can taste reminiscent of a sparkling wine. Concord grapes produce the most classic flavor, while green grapes offer a lighter, crisper profile.

Fresh grape juice (not from concentrate) gives the best results. Halve fresh grapes to release their juice. Red grapes add beautiful color. Watch carbonation levels as grape sugar ferments vigorously.
